How much meat comes in a quarter beef?
A finished cut & wrapped, boxed quarter weighs 100-125 pounds, depending on the size of the steer. Beef is dense and takes up very little room. A quarter beef will be packed in 3 to 4 boxes. Each box measures 20.75" x 14" x 6.5". What cuts do I get in a quarter beef? The number below are approximate - there is variation within each animal. Steaks (cut 1" thick and packed individually):

Do I receive only the front or rear quarter? Beef is processed by the side. Once the side is processed into finished, wrapped portions it is sorted into even quarters and boxed. How is the hanging weight price reflected in the finished meat price? Our price is based on the hanging weight of the carcass before it is processed into cuts. Our USDA processor weighs the carcass by the half. We pay the processing fees based on this weight and price the beef by this same weight. The $11.00/lb price is based on the hanging weight and translates to about $18.30/lb for the finished cuts once the bone and excess fat is discarded. This price is very competitive with premium retail beef prices when you average the cuts. Why is there a $1,000 deposit required? The quarters generally cost from $1,600 to $2,300 depending on the weight. We can't hold beef for customers without knowing it is indeed sold. We will send you a final bill based on the official USDA weight once it is reported to us. Do I need a special freezer? A small chest freezer works great, and they are very reliable. 7 cubic feet is the smallest we recommend for a quarter beef. |
